The Olaszrizling is picked early, and the wine finishes its fermentation in bottle rather than in tank — the traditional route to natural sparkle. Aged on its own lees before disgorgement, it comes out off-dry and lively rather than bone-dry, with just enough residual sweetness to soften the acidity. Only 450 bottles of the 2025 vintage exist. The wine finishes its fermentation in bottle, ageing on its own lees before disgorgement — the traditional method behind natural sparkling wine, left off-dry (7.45 g\/l residual sugar) rather than pushed fully dry. No cultured yeast, no added dosage, no filtration.
