It is grown almost exclusively in the area around Plovdiv, and for most of the 20th century it was processed industrially, buried in co-operative blends. Georgiev\/Milkov were the first producers to make a pét-nat from it.\u003c\/p\u003e\u003cp\u003eThe idea was simple: press the red grapes immediately, keep the juice white, and bottle before fermentation finishes. The result is a wine that carries the aromatic signature of Mavrud — wild red berries, herbs, mineral grip — without any of the tannin or weight.
