Pink Side is the lighter side of Rubin: 100% free-run juice, no skin contact, entirely spontaneous fermentation and ageing in 500-litre acacia barrels.\u003c\/p\u003e\u003cp\u003eThe vines are over 50 years old, growing on brown forest soils in Brestovitsa near Plovdiv. This is the 2025 vintage — bottled in spring 2025, the freshest expression of the grape. Georgiev\/Milkov harvest in small crates, sort by hand, and let the acacia do the rest.
