The result sits between white and orange wine: the mineral tension of Elbling is still there, but now wrapped in texture, warmth, and a deep amber colour that comes entirely from contact with the skins. The vines are over 40 years old, on clay over limestone. Fermented spontaneously in a 400L old acacia barrel, 12 months on the lees, unfiltered, under 8 mg\/l sulphites total.
