THE STORY

Anyone who has had vin jaune with Comté knows the combination: walnut, a faint oxidative edge, and a cheese that tastes better for it. Bulles de Jardins White Grape & Walnut goes after that same pairing with no alcohol in it. Alix and Henry say they never set out to imitate wine, and this bottle shows what they mean. It opens amber, white grape and vine, with a slightly oxidative note. Fresh fig sits in the middle, walnut closes it. Jardins themselves say it recalls certain wines from the Jura. The label reads Raisin Blanc & Noix. Their perfect pairing is a Comté from the Jura, and we agree. After that: mushroom risotto, roasted squash, an apple tart at the end of a long lunch.

WINEMAKING DETAILS

Made in the Cognac region by blending macerates, infusions and extracts of organic plants. White grape juice and grape must, an infusion of fresh fig, lemon juice, vine extract and a natural walnut flavour, with water and bubbles. Nothing is dealcoholised: it never contained alcohol. No added sugar. Bottled under cork.

SERVING NOTE

Serve chilled, around 8–10°C. Put it in the fridge for 25 minutes before opening. Already cold? Take it out and wait 5 minutes — the walnut and fig notes show more with a touch of warmth.

Pour into a white wine glass. No ice, no mixing needed. A light natural sediment may form: turn the bottle gently before opening. Once open, keep it in the fridge and finish within a few days.
