THE STORY

La Source means "the spring" — the origin, the beginning. It is the fullest wine in the Racines Rebelles range, and the only one built around Pinot Blanc. Where the Elbling wines are lean and mineral, La Source offers texture: three days of skin contact on 70% of the blend adds body and warmth without adding weight. The result is a wine that opens up slowly in the glass, revealing layers that the other wines don't have. Forty-year-old vines on clay over limestone, spontaneous fermentation in large old oak barrels, 12 months sur lie. The entry point into the range for anyone who prefers their natural wine with a little more flesh on the bones.

WINEMAKING DETAILS

Harvested by hand from 40-year-old vines on clay over limestone. 70% with 3 days skin contact, 30% direct press, spontaneous fermentation in large old oak barrels, 12 months sur lie, unfiltered. Zero residual sugar. Total sulphites 12 mg/l.

SERVING NOTE

Serve at 12–14°C. Give it 10 minutes out of the fridge before opening. A short decant of 15–20 minutes brings out the fuller texture of this wine. Don't over-chill — it flattens the roundness.
