THE STORY

Mavrud is Bulgaria's most important red grape — tannic, deeply coloured, with a history stretching back to the ancient Thracians. It is grown almost exclusively in the area around Plovdiv, and for most of the 20th century it was processed industrially, buried in co-operative blends. Georgiev/Milkov were the first producers to make a pét-nat from it.

The idea was simple: press the red grapes immediately, keep the juice white, and bottle before fermentation finishes. The result is a wine that carries the aromatic signature of Mavrud — wild red berries, herbs, mineral grip — without any of the tannin or weight. Blanc de noir from a grape nobody outside Bulgaria has heard of. 40-year-old vines on cinnamon-forest soils in Novi Izvor, hand-picked in crates, zero sulphites added at any stage.

WINEMAKING DETAILS

Hand-picked in crates from 40-year-old vines on cinnamon-forest soils, Novi Izvor, Plovdiv. Grapes pressed immediately with no skin contact. Spontaneous fermentation. Bottled at the last stage of fermentation — fermentation finishes in the bottle. Disgorged end of January 2025. No added sulphites. Unfiltered.

SERVING NOTE

Serve well chilled at 7–9°C. Open gently — this is a live wine. Pour slowly. Drink it young and cold; it's not built for ageing.
