THE STORY

This is where UTOPIA begins — vinegar with nothing added, nothing macerated in. Just apples, oak, and time. Eva and Ivo left the industrial food system for a small fortified farm in the Josafat Valley, where cider ferments spontaneously for a year, then moves into dedicated vinegar barrels for another eight-plus months, turning by the old, slow Orleans method.

Most vinegar is made in days. This one takes almost two years. What comes out is closer to a fine, sippable ferment than anything from a kitchen cupboard — aromatic, layered, gentle enough to drink diluted, on its own.

WINEMAKING DETAILS

Old Czech apple varieties, wild seedlings found in the valley, and English cider apples are pressed and left to ferment spontaneously with local wild yeasts in 225-litre neutral oak barrels for 12 months, becoming cider. The cider then moves into dedicated vinegar oak barrels for a further 8+ months, converting slowly by the original Orleans method. No added sulphites, no fining, no filtration beyond a coarse pass. Unpasteurised throughout.

SERVING NOTE

Dilute 1 part vinegar to 9 parts still or sparkling water — add a splash of alcohol if you like. Also excellent in cocktails, shrubs, switchels, smoothies, dressings, soups, sauces, and hot drinks. If drinking it regularly as a tonic, up to 25ml (about 2 scant tablespoons) a day. Store cool, below 8°C, to slow the growth of the vinegar mother in the bottle.
