THE STORY

The deepest bottle in UTOPIA's range. Same two-step base as everything else — a year as cider, another turning slowly to vinegar by the Orleans method — macerated with dried plums that have been smoked over plum wood, then rounded out with a little honey. The smoke doesn't dominate; it sits underneath the fruit, the way a good smoked tea sits underneath its own leaves.

Made in small batches at Sudkův Důl, the fortified farmstead where Eva and Ivo do everything the slow way — including this.
WINEMAKING DETAILS

Base cider ferments spontaneously with wild local yeasts in neutral oak for 12 months, then moves to dedicated vinegar oak barrels for a further 10+ months by the traditional Orleans method. The finished vinegar (80% of the blend) is macerated with dried plums smoked over plum wood, with honey added to round the finish. No added sulphites. Unpasteurised, only coarsely filtered.
SERVING NOTE

Dilute 1 part vinegar to 9 parts still or sparkling water — add a splash of alcohol if you like. Excellent hot, in a toddy-style drink, or in cocktails, shrubs, switchels, dressings, and marinades. If drinking it regularly as a tonic, up to 25ml (about 2 scant tablespoons) a day. Store cool, below 8°C.
