THE STORY

The same base as every UTOPIA vinegar — apples turned to cider over a year in oak, then turned again into vinegar over another, by the slow Orleans method — macerated here with sour cherries and elderflower. The floral note doesn't sit on top so much as thread through the whole thing, softened just slightly by a touch of organic sugar.

This is a limited batch, made the way UTOPIA makes everything: patiently, with fruit and flowers from the valley around Sudkův Důl.

WINEMAKING DETAILS

Base cider ferments spontaneously with wild local yeasts in neutral oak for 12 months, then moves to dedicated vinegar oak barrels for a further 10+ months by the traditional Orleans method. The finished vinegar (78% of the blend) is macerated with sour cherries and elderflower, with a small addition of organic sugar to round the finish. No added sulphites. Unpasteurised, only coarsely filtered.

SERVING NOTE

Dilute 1 part vinegar to 9 parts still or sparkling water — add a splash of alcohol if you like. Also excellent in cocktails, shrubs, switchels, smoothies, dressings, and fresh juices. If drinking it regularly as a tonic, up to 25ml (about 2 scant tablespoons) a day. Store cool, below 8°C.
