THE STORY

Rubin is a Bulgarian grape variety registered in 1944 — a cross between Syrah and Nebbiolo. It has the structure of one and the floral elegance of the other, which is what makes it so interesting for rosé. Pink Side is the lighter side of Rubin: 100% free-run juice, no skin contact, entirely spontaneous fermentation and ageing in 500-litre acacia barrels.

The vines are over 50 years old, growing on brown forest soils in Brestovitsa near Plovdiv. This is the 2025 vintage — bottled in spring 2025, the freshest expression of the grape. Georgiev/Milkov harvest in small crates, sort by hand, and let the acacia do the rest. The result is a rosé with genuine depth: not just pink and pretty, but textured, fragrant, and built to last in the glass.

WINEMAKING DETAILS

Hand-picked in crates from 50-year-old vines on brown forest soils, Brestovitsa, Plovdiv. Free-run juice, no skin contact. 100% spontaneous fermentation in 500L acacia barrels. 4 weeks on the lees after fermentation. Total ageing approximately 4 months in barrel, then blending and bottling spring 2025. Unfiltered.

SERVING NOTE

Serve well chilled at 8–10°C. Take it out of the fridge 5 minutes before pouring. No decanting needed — this one is best fresh and cold.
