THE STORY

Dalmà is the most complex drink in the SafranFou range, and the one that takes the longest to understand. The koji brings an umami structure that reads almost like a white Burgundy — deep, savoury, with weight on the palate. The lavender doesn't perfume it; it opens the aromatics and then steps back. Dried apricot adds body and a long, warm finish. Maël Le Noguillard ferments this in Padern until no sugar remains, then bottles it without pasteurisation. The result is bone-dry and quietly demanding — a drink that works best with food that has some complexity of its own.

WINEMAKING DETAILS

Dalmà is built on the same live kefir grain base as the rest of the SafranFou range, fermented with raw cane sugar, filtered water, and dried apricots. Koji culture and lavender floral water are added during fermentation, contributing umami depth, structural complexity, and aromatic lift. All ingredients certified organic. No pasteurisation, no artificial additives. Fermentation runs to completion — zero residual sugar. Small-batch production in the old cooperative cellar in Padern, Hautes-Corbières.

SERVING NOTE

Serve chilled, around 10–12°C. Put it in the fridge for 20 minutes before opening. Already cold? Take it out and wait 5 minutes — this one benefits from a little warmth to reveal its aroma.
