THE STORY

Safran is the drink that gives SafranFou its name. Maël Le Noguillard grows the saffron himself on a small plot in Padern — each crocus flower picked by hand, each stigma harvested at dawn when the flowers open. It is one of the most labour-intensive crops in the world, and that specificity carries through into the glass. The saffron gives the kefir its amber-gold colour, a deep floral complexity, and a dry, almost saline finish. Fermentation runs to completion. The result is radical in the most precise sense: something that could not have come from anywhere else, made by someone who chose the hardest possible ingredient and worked backwards from there.

WINEMAKING DETAILS

Safran is built on live kefir grains fermented with raw cane sugar, filtered water, lemon juice, and dried figs. Estate-grown saffron from the Padern plot is added during fermentation, contributing colour, aromatic complexity, and a dry spiced character. All ingredients certified organic. No koji in this expression — the saffron works alone. No pasteurisation, no artificial additives. Fermentation runs to completion. Tiny-batch production at the old cooperative cellar in Padern, Hautes-Corbières.

SERVING NOTE

Serve chilled, around 10–12°C. Put it in the fridge for 20 minutes before opening. Already cold? Take it out and wait 5 minutes — this one benefits from a little warmth to reveal its saffron aroma.
