THE STORY

Every UTOPIA vinegar starts the same way: apples turned to cider over 12 months in neutral oak, then turned again, slowly, into vinegar over another year by the old Orleans method. This is one of the limited-batch versions — the finished vinegar macerated with fresh raspberries, folded in to add a bright, jammy top note over the base's natural depth.

Michelin-listed kitchens in Prague and London already pour UTOPIA's vinegars alongside their wine lists. This is the one that tastes like summer fruit and oak in the same breath.

WINEMAKING DETAILS

Base cider ferments spontaneously with wild local yeasts in 225-litre neutral oak barrels for 12 months, then moves to dedicated vinegar oak barrels for a further 10+ months, converting by the traditional Orleans method. The finished vinegar is macerated with fresh raspberries in a small, limited batch. No added sulphites, no fining. Unpasteurised, only coarsely filtered.

SERVING NOTE

Dilute 1 part vinegar to 9 parts still or sparkling water — add a splash of alcohol if you like. Also excellent in cocktails, shrubs, switchels, smoothies, dressings, and fresh juices. If drinking it regularly as a tonic, up to 25ml (about 2 scant tablespoons) a day. Store cool, below 8°C.
