The loudest of the three Bulles de Jardins. It starts soft, rose and lychee, the kind of opening that makes you expect something sweet. Then the ginger comes in, hibiscus adds a tart edge, and the finish is all chilli and pepper. Alix and Henry call it both subtle and spicy, which is about right. Jardins pour it with dorade carpaccio, sea bass and Asian food, then again with chocolate fondant or lemon tart. A rare bottle that works at both ends of dinner.

Made in the Cognac region by blending macerates, infusions and extracts of organic plants and flowers. Organic apple juice, ginger juice, an infusion of hibiscus and grape must, with natural rose, lychee, chilli and pepper flavours, water and bubbles. Nothing is dealcoholised: it never contained alcohol. No added sugar. Bottled under cork.

Serve well chilled, around 6–8°C. Put it in the fridge for 30 minutes before opening. Already cold? Open and pour straight away.

Pour into a white wine glass or a coupe. No ice, no mixing needed. A light natural sediment may form: turn the bottle gently before opening. Once open, keep it in the fridge and finish within a few days.
