THE STORY

Mario is named after Marijan Kelhar — the father who built the winery in 1989 and handed the keys to his son without letting go completely. The wine is his bottle, named for him. It's made from Rumeni Plavec and Chardonnay, grown at 350 metres above Bizeljsko on south-west slopes. The method is its own thing: fermented in steel for a full year, then fresh must from the next harvest is added just before bottling to restart fermentation in the bottle. It gets disgorged after three or four months — no dosage, no addition. That's not pét-nat. Pét-nat keeps the sediment, doesn't get disgorged, finishes in the bottle and stays cloudy. This is clearer, drier, more precise. If you've had pét-nat before and thought it was a bit unpredictable — this is the version that made up its mind.

WINEMAKING DETAILS

Rumeni Plavec and Chardonnay, hand-harvested from south-west facing slopes at 350 metres above Bizeljsko. Spontaneous fermentation in stainless steel with ambient yeasts, aged on fine lees for one year. Fresh must from the following harvest added just before bottling to trigger refermentation in the bottle. Disgorged after 3–4 months without dosage. Clear, dry, no added sulphites, no fining, no filtration. Organic, Demeter certified.

SERVING NOTE

Serve well chilled, around 6–8°C. Put it in the fridge for 30–35 minutes before opening. Already cold? Open and pour straight away.

This is a sparkling wine — treat it like one. No sediment, no decanting needed. Just chill and enjoy.
