THE STORY

Marlstone and clay, a hillside in Bizeljsko, far east Slovenia. This is where the Kelhar family has farmed for 240 years, and where the Cabernet Sauvignon for this wine grows.

The grapes are picked in late September and pressed directly. Then comes the unusual part: the juice ferments in small used oak barrels and stays there for a full year. That is a path most people keep for reds and orange wines, not for rosé.

The result is intense on the nose and on the palate, yet still easy to drink, at 12.5% alcohol. A rosé for people who say they do not drink rosé.

WINEMAKING DETAILS

100% Cabernet Sauvignon from marlstone and clay soils, harvested in late September. The grapes are pressed directly and the juice ferments in small used oak barrels. The wine then ages in the same barrels for 12 months before bottling. Labelled as a Dry Rosé Wine with RGI (Regional Geographical Indication) Posavje, certified organic, 12.5% alcohol. Keltis has been certified organic since 2009 and Demeter certified since 2022. Spontaneous fermentation with ambient yeasts, no fining and no filtration are standard practice at the estate, and no sulphites are added — as with the rest of the Keltis range, only what fermentation itself produces naturally remains in the bottle.

SERVING NOTE

Serve chilled, around 10–12°C. Take it out of the fridge 10 minutes before pouring.

This rosé spent a year in oak, so a wide glass helps: give it a few minutes to open up.
