THE STORY

Forever Young is named the way a mixtape gets named — Tamara labels her Pét-Nats after the songs that were playing while she made them, cassette tapes printed right on the bottle. This one is a cuvée of Gelber Muskateller and Welschriesling, hand-picked from the steep slopes around Ratsch and finished entirely on the estate, because that's the whole point of Pét-Nat for Tamara: unlike traditional sparkling wine, nothing has to leave the farm.

She started making Pét-Nat after tasting one from a fellow Austrian winemaker and realising this method let her stay in full control, vintage by vintage, judged by feel rather than formula. The result is taut and dry, white apple and citrus zest, with a fine, persistent mousse. It's the wine that made her name.

WINEMAKING DETAILS

Grapes are hand-harvested from Kögl's biodynamic, Demeter-certified vineyards on the steep slopes around the Stermetzberg, farmed without synthetic inputs and worked almost entirely by hand due to the incline. Fermentation begins spontaneously with native yeasts and is bottled before it finishes, so the wine completes its fermentation inside the bottle, trapping natural CO2 and a fine sediment of lees. No dosage, no disgorgement, no filtration — everything happens on the estate, sealed under crown cap.

SERVING NOTE

Chill for 30 minutes before opening. Already cold? Open and pour straight away — best served around 6–8°C.

This is a Pét-Nat sealed under crown cap: open slowly and carefully, the same way you would a beer bottle. A light sediment is normal. Swirl it in gently if you like, or leave it settled — either way, no decanting needed.
