THE STORY

Kalkmergel is the name of the soil — a chalky limestone-marl that runs through the hills around the Stermetzberg — and Tamara names this bottling after it directly. It's Morillon, Styria's own word for Chardonnay, grown on those slopes around Ehrenhausen where machines can't reach and everything is done by hand.

Falstaff scored it 92 points: juicy, slim and filigreed, with a fine acid line and ripe stone fruit lingering into the finish. It's a wine built for people who think they know Chardonnay and don't expect this — texture from the soil, precision from the hand that farms it.

WINEMAKING DETAILS

Hand-harvested from biodynamic, Demeter-certified vineyards on limestone-marl (Kalkmergel) slopes around Ehrenhausen — organic since 2013, biodynamic since 2018. Vinified fully dry in the Austrian DAC tradition, with minimal intervention. The chalky, mineral-rich soil gives the wine its structure: a creamy, harmonious mid-palate balanced by a fine, precise acid line through the finish.

SERVING NOTE

Chill for 25 minutes before opening. Already cold? Take it out and wait 5 minutes — this white is best around 10–12°C.

No decanting needed, but give it a few minutes in the glass — the nutty, stone-fruit notes open up nicely with a little air.
