THE STORY

Tamara calls this one R.E.S.P.E.C.T. — another cassette on the label, another mood in the glass. It's made entirely from Zweigelt, worked as a rosé Pét-Nat: own grapes, indigenous yeast, the same on-farm philosophy as Forever Young, but built around red fruit instead of white. Only 2,600 bottles of this vintage exist.

Unlike her other Pét-Nats, this one is disgorged before release, giving it a cleaner, more precise finish while keeping the natural fizz from bottle fermentation. The colour is barely-there salmon pink, the nose all redcurrant and strawberry jam, and the palate is silky, mineral, tightly balanced between fruit and acidity.

WINEMAKING DETAILS

Own Zweigelt grapes from Kögl's Demeter-certified biodynamic vineyards are hand-picked and gently pressed for a pale rosé colour. Fermentation starts spontaneously with indigenous yeast and is bottled before completion, trapping the wine's natural fizz inside the bottle in the traditional Pét-Nat method. Unlike Forever Young, this cuvée is disgorged — the sediment is removed after lees ageing — giving a clearer, more polished wine while keeping the minimal-intervention approach throughout: no fining, no filtration beyond disgorgement. Only 2,600 bottles produced.

SERVING NOTE

Chill for 30 minutes before opening. Already cold? Open and pour straight away — best served around 6–8°C.

Unlike Forever Young, this one is disgorged, so the pour is clear — no sediment to manage. Open the crown cap slowly, the same way you would a beer bottle, and enjoy straight from the fridge.
