THE STORY

Roche Liquide means "liquid rock." The name is literal. Elbling is one of the oldest cultivated grape varieties in Europe — it has been growing along the Moselle since Roman times and survives almost nowhere else. Most producers who still grow it blend it away or use it for Crémant base. Kaja Kohv gives it a solo performance: direct press, 12 months on the lees in a single 500L old oak barrel, nothing else. No skin contact, no manipulation. The wine is the grape and the geology — clay over limestone that was the floor of a Jurassic sea 200 million years ago. At 9.5% alcohol, it is one of the most precise and least-interfered-with wines in the range.

WINEMAKING DETAILS

Harvested by hand from 40-year-old vines on clay over limestone. Direct press, spontaneous fermentation in a 500L old oak barrel, 12 months sur lie, unfiltered. Zero residual sugar. Total sulphites 14 mg/l.

SERVING NOTE

Serve well chilled at 8–10°C. This is a lean, mineral wine — cold is its element. No decanting needed. Drink young while the acidity is at its sharpest.
