THE STORY

Sur la Peau means "on the skin." Elbling almost never gets skin contact — it is a thin-skinned, high-acid variety that winemakers typically press straight and bottle young. Eight days of maceration is a deliberate act of curiosity. The result sits between white and orange wine: the mineral tension of Elbling is still there, but now wrapped in texture, warmth, and a deep amber colour that comes entirely from contact with the skins. The vines are over 40 years old, on clay over limestone. Fermented spontaneously in a 400L old acacia barrel, 12 months on the lees, unfiltered, under 8 mg/l sulphites total. It is the most tactile wine in the Racines Rebelles range.

WINEMAKING DETAILS

Harvested by hand from 40-year-old vines on clay over limestone. 8 days skin contact, spontaneous fermentation in a 400L old acacia barrel, 12 months sur lie, unfiltered. Zero residual sugar. Total sulphites under 8 mg/l.

SERVING NOTE

Serve at 12–14°C — slightly cooler than a full red, slightly warmer than a crisp white. This wine opens up with time in the glass. If you have 20 minutes, a quick decant is worth it.
