THE STORY

Rivaner — also known as Müller-Thurgau — has a reputation problem. It is the workhorse grape of Central European cooperatives, planted everywhere for volume. What Kaja Kohv does with it is different. Grown on ancient gypsum soil, blended with Auxerrois, given 12 days of partial skin contact and a full year on the lees: it becomes something aromatic, textured, and genuinely surprising. Synergie Sauvage is the most experimental wine in the lineup — the blend shifts every vintage depending on what the season gives. The name means "wild synergy." That's what it is.

WINEMAKING DETAILS

Harvested by hand from 30-year-old vines on gypsum soil. 80% direct press, 20% whole-cluster skin contact for 12 days. Spontaneous fermentation in old oak barrels, 12 months on the lees, unfiltered. Zero residual sugar. Total sulphites 14 mg/l.

SERVING NOTE

Serve at 10–12°C. Take it out of the fridge 10 minutes before opening — cold suppresses the aromatics on this one. No decanting needed, but swirling the glass wakes it up quickly.
